PUNJABI RECIPES IN PUNJABI LANGUAGE-- PUNJABI PAKSAAL
This section attempts to introduce to the lovers of Punjabi cuisine, the rich tradition of Punjabi recipes handed down from generation to generation. Paksaal in Punjabi means kitchen. The word is perhaps derived from Sanskrit Pakshala, literally, a place for cooking. The word initially appears in the Sikh holy book Sri Guru Granth Sahib in a verse which symbolically refers to the fact that only a devotee with a pure heart can unite with God. The verse metaphorically refers to the food offered by the bride to his husband, cooked lovingly by her in the kitchen cleaned with a great effort. (SGGS page 1266 )
It is intended to update the page from time to time by adding new recipes. The recipe is basically written in Punjabi followed with English translation for non-Punjabis.
The inaugural recipe is for Tribhavali Prasad also known as kadah Prasad, the holy offering made in the Sikh Gurudwara (Temple).

ਕੜਾਹ ਪ੍ਰਸਾਦ ਅਥਵਾ ਤ੍ਰਿਭਾਵਲੀ ਪ੍ਰਸਾਦ
ਲੋੜੀਂਦੀਆਂ ਵਸਤਾਂ (ਸਮਗ੍ਰੀ) ( 50 ਦੀ ਗਿਣਤੀ ਵਿਚ ਸੰਗਤ ਵਾਸਤੇ )
1. ਆਟਾ ਕਣਕ ਦਾ ( ਥੋੜਾ ਮੋਟਾ ਪੀਸਿਆ) 500 ਗ੍ਰਾਮ
2. ਘਿਓ 500 ਗ੍ਰਾਮ
3. ਖੰਡ ਦਾ ਘੋਲ 500 ਗ੍ਰਾਮ ਖੰਡ 1.5 ਲਿਟਰ ਪਾਨੀ ਵਿਚ

ਕੜਾਹੀ ਵਿਚ ਘਿਓ ਪਾ ਕੇ ਮਧਮ (ਮੀਡੀਅਮ) ਅੱਗ ਤੇ ਪੰਘਾਰੋ.
ਆਟਾ ਪਾ ਕੇ ਤੇਲ ਵਖ ਹੋਣ ਤਕ ਰੋਸਟ ਕਰੋ (ਲਗਾਤਾਰ ਹਿਲਾਂਦੇ ਰਹੋ ਤਾ ਕਿ ਸੜੇ ਨਾ )
ਖ਼ੰਡ ਦਾ ਘੋਲ ਪਾ ਕੇ ਅੱਗ ਤੇਜ ਕਰ ਕੇ ਸਹੀ ਮਿਕਦਾਰ ਵਿਚ ਗਾੜਾ ਹੋਣ ਤਕ ਪਕਾ ਲੌ.
ਅਰਦਾਸ ਕਰ ਕੇ ਵਰਤਾਓ. ਖਿਆਲ ਰਹੇ ਕਿ ਜਿਆਦਾ ਗਰਮ ਨਾ ਹੋਵੇ ਕਿਓ ਕਿ ਪ੍ਰਸਾਦ ਹਥਾ ਤੇ ਲੈ ਕੇ ਛਕੀਦਾ ਹੈ ਜੀ.

Kadah Prasad or Tribhavali Prasad recipe. [ The holy offerings in a Sikh Gurudwara (temple).]
(Tribhavali in the name of recipe refers to the three main ingredients used in the cooking while Prasad literally means the grace but here it refers to the holy offering. Kadah refers to the vessel used for cooking the Prasad. )
Ingredients (Serves 50 people in the holy congregation @ app 40 grams for each.)
1. Whole wheat Atta (wheat flour, a little coarsely grounded) 500 grams
2. Ghee (clarified butter) 500 grams
3. Sugar syrup prepared with 500 grams of sugar mixed with 1.5 litres of water.
Method of cooking
Take ghee in the cooking vessel (kadah) and heat on medium flame
Add Atta and roast till the ghee separates stirring continuously to avoid burning.
Finally add the syrup and stir on high flame till the mixture attains the right thickness for serving.
To be served warm on bare palms joined in the shape of a cup.
Notes
- First an offering is made to God/Guru, by way of a prayer for the recipe to qualify for being called Prasad
- To be served warm enough but keeping in mind that the Prasad is usually served on palms joined as a cup.
